Cream Cheese-Filled Cupcakes

Cupcakes are like solo cakes that you can eat anytime without guilt. It's just the right size for one person, looks totally awesome and you can go crazy with possibilities, such as placing cream cheese on top of a basic flavor - in this case, chocolate.

Moist chocolate cupcakes made with the finest cocoa, topped with cream cheese and finally drizzled with chocolate ganache. I am in love. Oh, and these are ridiculously affordable too.

Omelettes or Pancakes?

Earlier this month, I posted this picture in Instagram with the caption "Omelette or pancake? Can't decide what it is."

After reading the recipe, tell me if these are pancakes or omelettes.

To make for one person, you need:
   1 medium ripe banana, mashed
   1 medium egg, beaten
   some chocolate chips

You can easily double the ingredients, just take note that 1 banana = 1 egg added to the mixture.

Mix everything. Do not add anything else.

The "batter" that you made has no flour so it's going to be runny. Cooking it any bigger than the one shown above will be a disaster specially when you try to flip it. Believe me, I tried. That's why there are only three pancakes in the picture.

In a non-stick skillet over low heat, pour 1/4 of the mixture. Wait for a few minutes, flip. Wait for a few minutes, transfer to a plate.

So, what do you think?
Easy enough?
It's really good too, albeit weird.

Skydreamer Dines in Cebu: Buddies

Last Friday night was a mix of emotions - lots of laughter as we caught up with family who just got back from their Thailand vacation and will be going back to the States; we were in a jolly mood as we talked about their Thai adventure; but it was also full of tears, hugs and kisses because we didn't know when we'll see them next. Perhaps next year? Five years from now? After a month of vacation, they're going back to their real world, and we'll go on with our lives too.

After they left for the airport, those of us who were left in the hotel lobby decided to get something to eat and catch up. Outside we spied Buddies, a local burger joint in Escario Street.

We took our orders, sat down and talked about beginnings and basketball. :D

Hungry, we waited for our food to arrive and when they did, our table fell silent as the waiter brought them out one by one:

The burgers were AMAZING! The burger patties were cooked just right with well seasoned beef. Buddies' burger patties were the juiciest I've eaten in Cebu so far.
Philly Cheesesteak was decent - not really a game changer.
Their quesadillas were too strong for me - and that's big coming from someone who loves herbs and spices - I just don't like too much cilantro! (The waiters later explained that we could request to have less cilantro).

But the burgers - did I mention they're amazing?!
